Ingredients

1 lrg red onion
1 1/2 tbsp Veg oil
5 medium beets (2lbs) peeled + cut into 1 inch pieces
1 red apple peeled + cut into 1 inch pieces (I often put 2 apples)
2 garlic cloves minced
4 cups chicken or veggie broth
4-5 cups water (I tend to do about 1-2 C H20 & add later if needed)
2 Tbsp apple cider vinegar
1 Tbsp packed brown sugar

Directions

Prep all the ingredients, cutting the apples, onions and beets in advance and mincing the garlic

Heat oil on medium heat & cook onion until soft

Add beets & apples & cook for 5 minutes

Add garlic & cook for 30 seconds

Add broth & H2O & simmer uncovered for 40 minutes

Stir in vinegar & brown sugar

Ff preferred blend / puree soup (we like this best)

NOTE: can be topped with a dallop of sour cream or plain yogurt when eating - yummy!
