Ingredients
30 coloured marshmallows chopped
1/4 cup chopped walnuts
1 egg
1 cup icing sugar
beat well and add
3 tbsp melted butter
2 melted chocolate squares (semi sweet)
1 cup of shredded coconut
Directions
Chop the coloured marshmallows and nuts and put to the side.
Beat the egg and 1 cup icing sugar well.
Melt the butter and chocolate squares. When they are melted, add them to the egg and icing sugar mixture and mix well.
Add the marshmallows and nuts to the melted chocolate mixture.
Sprinkle shredded coconut in a line on a sheet of parchment paper.
Place the marshmallow/chocolate mixture into a log shape onto the shredded coconut and ROLL!
Wrap up into a roll/log shape, place in the fridge or freezer until ready to slice and share.
