Corn Salsa



Corn season continues. Let's make some corn salsa!

INGREDIENTS

2 cups corn

2 cups black beans

1 red pepper - diced

1 jalapeno - diced

1 onion - diced

4 tomatoes - diced

1 jar tomato puree

1 tsp black pepper

1 tsp salt

1 tsp cumin

1 tsp garlic

1/3 cup vinegar


DIRECTIONS

Add all ingredients to a pot

Stir and let simmer on medium low for 15 - 20 minutes

Jar and enjoy refrigerated for 2 - 3 weeks
