Pickled Carrots

Let's make some pickled carrots!

1 lb carrots - peeled and chopped into matchsticks


Brine:

2/3 cup water

2/3 cup vinegar

1 tbsp sugar

1 tsp salt


Place the carrot sticks into jars.


In a pot, simmer the brine ingredients until the spices are dissolved.

Pour over the carrots to cover them.


Seal and refrigerate to marinate for at least an hour. The flavors intensify with time so best to keep it marinating for 24 hours.


Enjoy for up to 3 weeks!
